First try at ABT's last night (few photos)

My wife mentioned she wanted to make jalapeno poppers last night and I thought I'd find a way to get them a little more interesting. I found out about ABT's and instantly decided that I needed this in my life.
I stopped on the way home and picked up a few more jalapenos and some bacon. I figured I'd rather make some more than needed so I could bring some into the office to share. I ended up getting some regular Hormel Black Label bacon. Nothing too fancy.
Started up the Egg as soon as I got home. I sliced, stuffed and wrapped them up and by that time the Egg was holding at 240. I threw them on and smoked them over some cherry and hickory for 75 minutes. As I type this, I think I was supposed have been on there for 90-120 minutes. They turned out really great still!

Looks great. I like to put a shrimp on top of the cheese...Also try the love bites. I always go indirect but in Salado went raised direct. Got also little more crisp and faster. Keep em coming.Green egg, dead animal and alcohol. The "Boro".. TN

Pantsy, it depends on how much heat you want. More seeds you leave in the more heat. Also the longer you leave them on the, the mellower they become.Large and Small BGECentral, IL

@pantsypants-that's the beauty of the ABT-you can load them up with most anything using cheese as the "glue" for the filling. I use left over brisket, pulled pork, chix, sausage, etc. For cheese, depends on the heat you want; habenero to cream cheese and everything in between. I have used shrimp like @henapple above and he just did some with chocolate and a cherry.Generally two cook styles, half boats (deveined and seeded) or reassembling the two haves after cleaning and loading, then wrap with bacon and cook either indirect or raised direct at around 350*F. Try googling abt's and big green egg or the search function here for much more info. Great eats!Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

@pantsypants I took as many seeds I could get out as well as the spine and just used some "Mexican 5 cheese blend." We normally use cream cheese when we do poppers but I wanted to try "pure" ABTs.@henapple I'm going to surprise my wife with shrimp ABTs soon. I've developed a shellfish allergy over the past couple years (and it breaks my heart...I love me some shrimp).

Just another way is to mix cream cheese, goat cheese and candied jalapeños chopped up.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.
