It's close to spring here in NEFL & with that comes the yellow soot of pollen. Today I had planned on making the entire meal on the egg. So, as the time neared to prepping the meal and egg the winds became strong with heavy gusts and with all the oaks here it began to almost rain sideways with pollen. Nonetheless the meal was made indoors today. Here is this evenings menu >>Lump Blue Crab Cakes and Sea Scallops.

@td66snrf...Thanks! NEFL aka Northeast Florida area. We're located between Jacksonville and Gainesville (Middleburg) to be exact. Blue Crab Cakes >> (normally we would catch fresh Blue Crab out in Ponte Vedra at GuanaRiver but, this is store bought lump blue crab 1#. I cut the recipe roughly in half and it made 7-8 cakes. It's a real simple recipe and mmmmm....good !

Blue crab should be readily available for most of y'all but, it may not be quite as fresh as FL. Again I prefer to catch my blue crab myself for 2 reasons. 1> I get both lump and claw meat 2> it's as fresh as it's gonna get. Not to mention it's pretty fun to do it. Each person is allowed up to 10 gallons of blue crab per day. If you are wading in 4 ft or less of water to trap or catch blue crab no license is needed. So it is also cheap to do. We typically fish at the same time so there ya go.

Yup, here is the before shot, doesn't get any fresher than this....should be in season up here in the near future (these are from last Memorial Day)
