St. Patrick's Day Sunday Cooks...

Doing the corned beef and cabbage today, all on the egg. Making some colcannon with kielbasa and Guinness inside on the stove too...
Have two small corned beef flats, rinsed them well, dried them off and then dusted with some salt, pepper, and garlic salt. I plan on smoking them for about 2 hours with some oak. After that, they go into a covered foil pan with some Guinness to braise till the IT is about 180, at which point I'll add the potatoes, carrots, and onions. Doing a smoked head of cabbage along with the briskets on the egg as well. Got the basic idea for this cook from a video on YouTube, just can't think of the guys name right now...

Looks like a hearty cook. I have never had corned beef that was not from a deli. I may need to give this a chance. Will wait for the final pics. Thanks

Just checked and put the veggies in with corned beef. Maverick is acting up since I put the veggies in... Said the meat was at 190 when I checked it, now it's showing 185... Meat wasn't tender really so I'm going to let go for another hour and keep and eye on it...
The colcannon is finished, mashed it up and got several thumbs up from my girls. Here's the brisket going for a dip in the Guinness.

colcannon looks amazing! I just walked to whole foods and grabbed some corned beef - about to throw it on in a minute once the guru locks in at 260. I like the price on your corned beef much better - had to post because you can see my new grilling partner in the back - such a fluff!Columbus, OH

Everything looks great, we used to do that with cabbage while camping. Core it, stuffed it with velveeta, double wrap in foil and toss into a campfire. Delicious!

The cabbage was cored, and I stabbed a bunch of holes in the body thru the core cavity. Salt,pepper, and garlic salt, some worsted shire , and half a stick of butter. Smoked it for a few hours...MSV Chill Spot
