Doing the corned beef and cabbage today, all on the egg. Making some colcannon with kielbasa and Guinness inside on the stove too...

Have two small corned beef flats, rinsed them well, dried them off and then dusted with some salt, pepper, and garlic salt. I plan on smoking them for about 2 hours with some oak. After that, they go into a covered foil pan with some Guinness to braise till the IT is about 180, at which point I'll add the potatoes, carrots, and onions. Doing a smoked head of cabbage along with the briskets on the egg as well. Got the basic idea for this cook from a video on YouTube, just can't think of the guys name right now...
