    I am using some old rum barrel chunks , and Tabasco/ Jack Daniels Barrel  chips .
    Both are Oak .

  • How big? Depends on how long it stalls. At 225 it could be an all day affair.

    I would like it to be off by 5 .  its been on for 13 hours

    I really have no idea on its weight as i get my meat directly from the processors .. so I get a box weight not individual

    Curious as to what the experts will say. Perhaps the crutch will be the answer. I'd be a nervous wreck if it were me. I'm known for being neurotic tho. Cen tex seems to take things in stride

    you are 100 % correct !!

    I am saying that i will crutch it by 3 is the temp isnt climbing steady .
    I need to have it off and wrapped by 5 so my guests can eat at 6

    When you live like I do taking things in stride is the only option. I would bump the temp up to around 260° and let it come out of the stall from there. That will give you time for a nice cooler rest.

    You probably still have four hours left at 260 if I had to guess.

    @pantsypants-if you want to get "into the zone" with @Cen_Tex then you have a short time to find and indulge in some supervisory adult beverages.  Once you get "on the plateau" then all will naturally flow and the karma and relaxation will follow. :)>-

    All the hard stuff is done. We will just tweak the finish to get you where you need to be. All is well so just enjoy the day and the rest will take care of itself. Little Steven has been talking about your meat all week. He's very impressed by it. :)). He is something else.
