Goat cheese & bacon stuffed Quail

Had some family and friends over tonight. We made burgers with beef and wild boar, also some hot dogs for the kids and some chicken sausages. Never got around to taking picture of those. Also cooked up some Quail that I brought back from a tower shoot yesterday. First time eating Quail and I really enjoyed it. I rubbed a could batches with a couple different dizzy pigs and another batch with some coffee rub. Cooked them raised direct at 425 just like little spatchcock birds. Turned them upside down and put a spoonful of goat cheese and chopped bacon (no skin on these guys) they turned out pretty good. It was nice being able to eat my target for once.
