Overnight cook with pics

8 LB chuck roast rubbed with salt and red pepper. Will cook to internal temp of 170 then will wrap with apple juice and drippings from the chuck. Will then cook to internal temp of 210. Cooking over a 50/50 mix of oak and apple at 225 degrees.

    Im cooking it tonight.
    Its a custom built vault by pitmaker in Texas.
    I do a good bit of cooking for local churches, charities and fund raisers.

    Wow that is quite the grill. My BIL is a pastor in Kansas City and they bring in custom catering for BBQing there. That would be a big of a pressure cooker when you are cooking for a large crowd, but I bet it is enjoyable as well. Good on you, it must be rewarding as well.

    Depends on how you load it and what cuts you load.
    I can easily load 300lbs of whole packers.
