    Well hot damn!  I don't want to jinx myself, but this sucker feels incredible.  I don't think my flat as ever felt this right.  I hope it's equally as satisfying on the cutting board than it felt through the paper.  Crossing my fingers.  :-SS

    Oh, so a lil bit of camera fail but tells me how good my cam is at high ISO.  I never changed my camera back from 4000 ISO so that explains why I had to use exposure compensation this morning.  lmfao    L-)

    Ok...pics coming.  Wish I had better lighting though.

    This is overall the best brisket i've ever made.  I always enjoy my point, but the flat was like a 8 where my previous attempts have been anywhere from the 1-5 range.  One 6 on my instructional brisket I did way back when.

    This definitely motivates me since it was all by feel.  I will be doing a brisket every week as this is my holy grail.

    I docked 2 points cause it lacked the moisture that Aaron Franklin's flat does.  None the less, great flavor and awesome tenderness.

    The pick under the point slice was cut like a big big pencil.  I just kinda cubed it up after that and ate point nuggets.  lol

    Thanks man!  I definitely call this a success seeing how this was the first time i've done one without a temp probe or the probe like butter test.

    I wish the pics gave it more justice but my lighting is piss poor in the kitchen.
