rib eye tonight!
Options
Doing some twice baked potatoes and a big ole' rib eye. Potatoes on now, steak to go on soon.

Reverse sear: indirect till it hits about 125 then take it off until Egg gets to 500 or so. Dry the steak and place in a hot CI skillet in butter. Sear for a minute per side. I will post pics. The taters are in and mixed with cheese(didn't have cheddar so used some goat cheese) sour creme, and butter then scooped back into skins. Back in at 350* I also seasoned the taters with Raising the Steaks. I used Mickey's coffee rub on the steak.In Manchester, TNVol For Life!

I'm cooking t-bones and sirloins tonight, dont have a cast iron skillet so I will be doing the 2 minute a side then close it up and let them set for another 3 to 4 minutes.
