I have had the Cornish Hens marinating in Olive oil Hot jalapeno's and mild Green chillies for about 8 hours. I plan to cook at 400 degrees indirect up in the dome.

Resauers Let me know if you like the taste of the marinade you are using. If its good going to try that myself. As far as the cooking you have the right plan. 350-400 raised direct works great. I like to turn mine ever so often when cooking direct. Its not a must but they seem to turn out better to me if i turn them a few times. Good luck brother.
