Mini Pepper Stout Beef

Yesterday's cook. I followed the recipe and it seemed to be going well five hours into the cook. Then I unwrapped the foil to take a peek and found that all of the liquid had cooked away. The roast look good...moist and tender but there was a thick layer of very brown colored yuck in the bottom of the pan. I brought it in and pulled the roast in a fresh pan. I was surprised that it tasted as good as it did. I think that the pan was too big for the Mini attracting more heat and hence cooking the liquid away sooner than expected. I finished my meal in 30 minutes...it took me twice as long to clean the pan. Heavy pics.
