Bacon!!!!!!!!!!!!

The bacon project i have been chronicling here for the last two weeks wrapped up today with the slicing and packaging.  We came out with about 7 lbs out of 8 lbs of belly going in, ate about a half lb on some breakfast sandwiches.  Really good, though the smoke is still kind of sharp - it will mellow as it rests i am sure.  It feels good to have a stockpile of bacon!  Half of this goes to my son, but I still have plenty.  

I am hooked.  Have two more 3 lb bellys in the freezer, will start curing next weekend

    Chefs choice 615.  The carriage is not long enough to do full length slices, so I had to cut in half which does not bother me.  Also I have to flip the belly about every 3rd pass to keep from getting a big "tail".  I am not complaining though.

    I did do a cold smoke using the Amaz N Pellet Smoker.   Went 8 hours, will drop it back to 6 for the next round.

  • The smoke will mellow some. I only got five or so hours on my last batch. First test was heavy, at the end I thought it could have used a bit more.
