The bacon project i have been chronicling here for the last two weeks wrapped up today with the slicing and packaging. We came out with about 7 lbs out of 8 lbs of belly going in, ate about a half lb on some breakfast sandwiches. Really good, though the smoke is still kind of sharp - it will mellow as it rests i am sure. It feels good to have a stockpile of bacon! Half of this goes to my son, but I still have plenty.
I am hooked. Have two more 3 lb bellys in the freezer, will start curing next weekend
