quick pork belly ideas

I just got a line on and am picking up a skin-off pork belly tomorrow. Would like to do an appetizer or snack for a Super Bowl party I will be attending. There were are couple of great recipe threads here that involve the skin, but I wont have any, and obviously don't have time for a full cure.
Any great ideas? Include a recipe if possible.

This is frustrating. I found quite a few recipes, but have a bunch of commitments, cannot devote the time that these recipes require.
