Bacon - Maple Flavored?

I have cured and cold smoked my first batch of bacon. The curing process involved adding pure maple syrup to the salts. I fried up a small piece and the maple flavor was very faint. I am thinking about slicing the belly into pieces and placing them in one pound Foodsaver bags. Do you think it would help to add some maple syrup in each Foodsaver bag to increase the syrup flavor? Thanks!

I'm not sure but I would be worried about the extra sugar burning while frying it up. You could try a small batch and see what happens. If you do, let us know the results.

Mine seems a bit too sweet. Brown sugar and maple syrup. Next batch I would like to get a little more savory.

I think you'd have better luck substituting the sugar in your cure for maple sugar. That way you're not adding more sugar but you've not diluted the maple flavor.Minimax and a wood-fired oven.

Givengold3, the savory from "Charcuterie" is amazing. I have tons of that on hand at all times.Columbia, SC --- LBGE 2011 -- MINI BGE 2013
