Spatchcock Turkey w/ Sweet Potato Casserole

I had a left-over turkey in the freezer and thought it was time. I spatched it, rubbed with Dizzy's Red Eye and made a sweet potato casserole with a pecan crust.

Thanks. It came out much better than I was thinking when I started. I tried a new brand of lump but it was 100% natural briquettes (Stubbs). It worked okay and had a good flavor. Reminder to self, read the whole bag before buying.

Dats a purty bird. I've almost done that with charcoal a few times. Good call on reading the bag, I always seemed to have issues with word problems in math.

Very nice birdSalado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.
