Picked it up from Publix on Friday, boneless 6 pounder. Took out of package at 4 am and cut two halves apart. Don't know if you're supposed to leave them tied together but I cooked them separate. Ran Egg around 250 but it did get up to 300 for a while. Learned a Lo about temp control today and looking forward to next low and slow. Did the foil, towel and cooler when internal temp reached 190. Let it set for 2 1/2 hours and then pulled for sandwiches. Excellent taste and tenderness. No photos but will do better next time.
