Welcome, and I see you are here in Greenville. I am over in 5 forks area near the dealer on Batesville road. You should plan on going to Georgia mountain eggfest in May. Hiawasse is not too far and it is a great event nearby.

Couple of things I found valuable:

Put egg in center with work space on both sides of egg

Bump your marble work surfaces up so they are higher than wood surface--lets you set down adjustable rig, hot stuff, etc, without scratching or burning the wood surface.

I've been looking at different table designs for my new egg.  I think I am going to model mine after yours, I like what you did with the recesses for marble(stone) for hot stuff.  The only thing I might do different(and please don't be offended) is I might do pocket holes and screws underneath to attach the boards on top to avoid screws on top.  Sorry the woodworker in me just had to say that!  Beautiful design and great idea for the marble for hot stuff! 

I cheated on the marble, they are actually pastry boards which seem to work fine.  The best place to get them thick, cheap and and large is at the Gourmet Chef store at the Gourmet Chef outlet in commerce georgia at the outlet mall (about $30 bucks each).  The ones in the table in the picture I ordered from Amazon, but they are not quite as large or thick as the ones I can get in Commerce.  My son and I are building/just finishing an identical  table for my brother in law, and we are using the larger ones on it. 

The other note on screwing from underneath is great idea, just a little too late for me though!
