Christmas Brisket

Hope y'all enjoyed the holidays.

Got a 14 lbs brisket on the egg. It's only been 9 hours at 220 and it's 177 in the flat and 175 in the point. I'm hoping for a killer stall soon.

Brought the egg to the in laws.

  • Reached 180 brought in and separated. Squared up the flat and wrapped it back on the egg. The point is burnt ends in a foil pan sauced ad seasoned back on the egg. The part off the flat is also foiled and will be chopped.

180 is too early to pull the brisket usually 192-195 is the sweet spot I have found.

It's still on the egg. I foiled the flat and put it back on.

Burnt ends look great. I had some left from a brisket several days ago so I wrapped them in bacon and am bringing them to our neighborhood game night tonight. Egg is warming up now just hoping adding bacon isn't too much. Congrats on the new little one.

  • Turned out to be a little dry for my taste, but the family enjoyed it.
