On low temp cooks I've always just used my bear paws to remove butts and briskets.
For anyone that might not know reverse searing a 10 lb. prime rib = INFERNO !
My bear paws along with a good pair of welding glove got ur done.
My bear paws survived , but I need a better plan for next time. Plastic and fire are not a good thing !
So what do you use ?

easiest way ive found with big chunks like that is glves and an adjustable rig. i grab the rig and remove it, flip the meat then back into a hot eggfukahwee maineyou can lead a fish to water but you can not make him drink it

It's hard to beat a cheap set of turkey forks for turkey, hams, butts or briskets!Re-gasketing America one yard at a time.
