I tried some thing new to make bacon. Instead of curing the pork belly via the conventional method (pink curing salt, spices, flipping multiple times thought out the week); I decided set the pork belly in a simple brine (pink curing salt, brown sugar, salt, maple syrup) I gotta say that this was the best bacon i have produced.

That sounds like the recipe in Charcuterie. But they advise flipping.
