Turkey Cook Help (Happening Now)

Hello everyone I am cooking a Mad Max Turkey today. This will be my first cook with the CyberQ and it is working great.

However, I am having an issue with the temperature of the breast rising much too quickly compared to the thigh. I followed his instruction on icing down the breast for 20 to 30 minutes. When I first put it on the grill, the breast was actually 20 degrees cooler than the thigh. Though, as you can see from the attached picture, that did not last long. I wanted to pull the turkey when the breast was at 160 and the thigh was at 180 but I do not think that the temperatures are going to work out like that. What can I do to get a more even cook? Or should I pull at a different temperature?

    The BGE is hottest toward the back so you should orient your bird with the legs to the back.  Beyond that I wouldn't mess with finish temperature.  You may get away with letting the breast run to 165 but if you still have the temperature issue then part out the bird (there goes the presentation) and let the thighs/legs finish.  Just an opinion and we all know  what those are worth...and it may slow down-also make sure your probes aren't touching bone or you will get bogus readings.

  • Thank you for the advice. I moved the breast probe, I think maybe I didn't go deeply enough into the bird. It is now reading much more closely to the thigh. I think that was my problem. It's still cooking more quickly but I think its much better.

    I also reoriented the bird so that the legs were in the back.

    You can try foiling the breast for a while
