I bought my first wok and received it a few days ago. Seasoned it, and cooked my first stir fry this evening.
Szechuan Pork in Garlic Sauce. I also tenderized and velveted the pork, and it was very tender.
Overall rating: Much better than a Chinese Restaurant.

Thanks, New2Q. I got the recipe at America's Test Kitchen . Look at the free video. It gives the recipe and also the tenderizing and velveting technique.From all my readings, velveting requires a relative low heat when cooking the meat, so I did that on the cooktop.
