Just go with your normal dough.

I make a hollandaise and use instead of normal pizza sauce.

I usually use a motz and cheddar mix for cheese.

Top with anything you like, (think omelet combinations)

    Good luck

Breakfast pizza was common when we lived in Iowa City. Seemed like they usually had cheddar cheese, scrambled eggs,  and sausage without any specific sauce. Omelet combinations sound like the way to go. I kinda miss them now.

Agree on the hollandaise sauce. Great with back bacon slices too. Next time I'll par cook the eggs in the sous vide.
