I tried apple/oak pellets some time ago and they were pretty good.#1 LBGE December 2012 • #2 SBGE February 2013 • #3 Mini May 2013A happy BGE family in Houston, TX.

Refrigerate, freezing changes the texture and can make it crumbly.They/Them

I know...4 weeks...it is going to be hard...So I got it all smoked...3 hours.Used the amazin smoker for the first time...worked great...put it on my ps legs up...and used a 100w lightbulb..its about 15 degrees outside today..maintained about 45 degrees in the egg...Got one block of cheese a little close to the burning pellets...melted a little...but not bad.Couldn't believe the amount of smoke it produced...lit both ends...went for about 4 hours and had half the middle row left to go.again...gonna be a long 4 weeks.Making the neighbors jealous in Pleasant Hill, Ia one cook at a time...

I do 90 minutes on cheese and let it rest 2 weeks no issues and tastes great

I tried mine with just regular cheeses from the store today. We did cheat and try a little once it cooled. Wife and daughter both pooh poohed it at first. Until they both went back for more. It will be used on Christmas. Next time I will plan on a longer age.
