Third time making pizza.

These pizzas are my third attempt at making pizzas.  I used 5 cups of flour, 2 tbsp olive oil, 2 tsp salt.  1 3/4 cup 110degree water, added yeast and 2 tsps of sugar.  Let the yeast get frosty. Kneed dough in KItchenaid mixer.  It turned out great.

I got the temp up to 600 degrees in bge.  Let it fall back to around 500.  During the baking of the four pizzas, temp dropped to 350.  Instead of adding more lump charcoal, i added 5-7 inch 1x1 inch oak wood scraps.  temps would go up to 450-500.  Place setter was placed legs down, with pizza stoce set directly on place setter.
