Thanksgiving brisket appetizer
Options
Just picked up a 7lb brisket.
Question - how long at 250 degrees? We will be leaving at noon on Thursday. The ride is only an hour so I will be good as far as timing on the FTC.
Just trying to back into when I should start in Wednesday night. This is also my first overnighter.

Brisket will normally run between 1 hour and 1.5 hours per pound.

14 hrs to be safe I would pull it after 10, place in a cooking pan with beef broth about 1/2 way up, foil and put it back for the final 4 hrs Good luckCharlotte, nc

Went on last night at 9:15. Was dialed in at 250 by 10:30. LAst check was at 11:30 still 250. Checked it at 5.45 this morning and the egg was at 200. THe brisket was at around 190 or so. I pulled it at 7AM at around 200 degrees. It is now in the FTB(bag)C. I may have to reheat it as we not be ready to eat it until 2PM. More pics after it is sliced.
