Brining a Butterball

The fresh Butterballs have the 5% solution shot in them. Can you brine/have you brined a Butterball? The reason I ask is my butcher said not to but the Butterball site has a How to Brine page with a brine recipe. Any thoughts?

As I have said several times it is a personal thing and I have brined birds for years that had higher percentages of injected "crap" than your Butterball. The Food Police have not hauled my butt to food jail yet and BTW we get raves for our birds!

I've brined butterballs with success and brined a Jennie-o that came out like trash. The butterballs work fine with brine but brining a fresh, un-enhanced bird will blow a butterball out of the water

I used the following this year and will in the future. It was really good.

1 cup Kosher salt (think I added more)
1/2 cup brown sugar
couple sprigs of thyme, sage, and rosemary
orange rind
peppercorns
half bulb of garlic

I brought this to a boil and intensify. Let set then pour over the bird. Add ice and chill for 24hrs.

After that, remove bird, wash off, rub with garlic/herb butter, and cook! Enjoy!
