Mom's Birthday Dinner Tonight

So we are cooking dinner for my mom's birthday tonight. Just 10 days after her bday, the price she pays for being a world traveler. Got some bacon wrapped dates stuffed with marscapone cheese, ribeyes, sweet potatoes, salad, and a pineapple upside down cake I made yesterday on the egg. I have done a few reverse sears with 1.5"-2" thick ribeyes. Can I do a reverse sear with a 1" thick ribeye? I appreciate the help, as I don't want to ruin moms nice looking steak!

Dates, stuffed with marscapone cheese, wrapped in bacon. Cook indirect at 350 for about 20-30 minutes, until bacon is done to your liking. You can mix it up and throw an almond Ina some of the dates. You can also add your favorite rub. They are pretty incredible. I've also made a balsamic reduction for a dipping sauce. It's good, but a lot of work.

I normally stuff them with blue cheese. This is a new one, so I'll report back on how the marscapone is.

I'd say blue cheese is better than marscapone.
