    Hoo Wee! Travis style!
  • Will work just fine, and you don't need Shiner Bock, any bock'll do. Done this with a crappy merlot I had that was not the best to drink, but cooked up just fine, Good luck!

And its almost there. Just a small area that needs a bit more time. Sitting at 203* currently. Have the cooler filled with hot water, as this will be a longer FTC, probably 5 hours.

  • 5 hour FTC is no problem.

Well, "spa-Peggy" is kind of like spaghetti. I'm not sure what Peggy does different, if anything. But it's the one dish she's kind of made her own.

And my little guy is "making more lunch" to go with the brisket. Wish I could have found him a BGE play set.

@Jeremiah My goal is not to. :) With the investment I have I figure I need to use it as much as possible to get maximum value out of it. ;)

@krobertsmsn He's set on a small. He was with me at a BGE dealer a few weeks ago and I asked him if he wanted the mini or the small. He said the mini was too small, he couldn't cook enough on it. I think I agree with him currently, small is on my wish list. Mom's not convinced yet...

  • I was really hoping this was about Brisket. There are a lot of "Travis Style" things out there. This is the only one fit for public display

It usually resolves with enough penicillin.

This is true. Depends on your shoe size, as some may say. One man's hematoma is another's Holmesian surprise.
  • well.............. "Holmesian Surprise" is a first for me. Well done. Could have done without the hematoma in the same sentence but beggars can't be choosers.

  • I guess size 9 doesn't cut it. Glad our sizes are metric, I'm a 32 heh, heh ,heh

It was on Woot a couple weeks ago. It just so fits on the XL. They have various other shapes and sizes as well. I think Amazon has them also.

How does the brisket look? All this talk about French diseases distracted me. (BTW, the swelling is the good part - its the rash that turns the ladies off)

I completely agree. I'm just jealous because I don't have more time to use it!

Here's what's left. Turned out really good. And the sauce from the drippings was good as well. Not much of a smoke ring and just a little bark. Very tender and juicy.
