I've been up for 35 hours...got home but had to cook. Of course I didnt pick something easy. Chicken pot pie.
Went with a beer butt ...i don't know how to spathcock a chicken
Not very pretty...
Enjoyed a stick while cooking.
What I learned...
Don't thicken the filling too much...it will cook more when crusted.
I had to brown the top with the broiler...even draped with hdaf it wouldn't brown to where i thought it should
Homemade crust is awesome... I'll never buy store bought again. Quick and easy.
Going from scratch this is not a quick cook
Tired as hell cooking on the egg is worth it. A little Cholula hot sauce and this was a great meal. Will do again.
I'll experiment with other ingredients...mushrooms for sure.
Thanks to @Griffin...his site recommended "pioneer woman" website. Just hit it and search ccp and pie crust.

And the easiest way to spatchcock a chicken is take kitchen or chicken shears and make a cut on either side of the spine. I just make one cut and cook with the spine on the bird. You could cut the spine out and save it for stock or something later, but my freezer is full of little animal scrap parts that I forget about. I find it even easier to just cut the chicken in half - one cut along the back and one cut along the length of the breast/keel bone. Chronic spatchcocking has it's own issues and associated stigma. I don't think henapple wants to add any more weight to those tired shoulders. Just something 12 oz PBR curls can't solve, ironic scarf or not. Great looking cook. I don't thicken the filling at all, just use gravy. I usually use sausage gravy.
