stuffed pork tenderloin
First post, love cooking on my BGE ! I butterflied some pork tenderloin and then pounded them flat. Sprinkled some rub, then layered Prochutto, Ricotta mixed with egg and seasoning, added fresh asparagus, red pepper slices, scallions, fresh sliced garlic, smoked gouda cheese and stove top pork stuffing made with 1/2 the recommended water, sun dried tomatoes, wild rice.
Rolled it up and tied it well with butcher string
250 indiresct slow cook with a few chunks of apple wood for 45 min. Then coated with Dinosouar BBQ sauce, raised temp to 450 and removed in about 20 min once a nice glaze was achieved.
It was outstanding !

Looks amazing! If you want to get more stuffing in you can overlap the pounded out tenderloins and pound the overlap down.
