How do you cook your Briskets and Butts, fat up or down and why?

Doesn't matter. I don't have any preference. I will sometimes do fat down if it is not fully trimmed so I don't loose any bark(the fat sticks to the grate instead)

I go fat up so that the fat bastes the meat as it renders down. Don't know if it really makes a difference or not though.Large BGE Decatur, AL

Fat down here-as @eggcelsior says, if anything sticks, it's the fat. But I have done fat side up and find no difference in taste. YMMV-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

I've done em both ways and can't tell much difference except as mentioned the fat sticking

Butts fat down because I was told to by the old forum. I have never done briskets.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

Butt fat up so far in my rookie career. Might try it down next time.

I always cook with fat up for 2 reasons 1st is I think the fat rendering some night go into the meat and 2nd is less chance of flare up2 Large Eggs and a Mini 2 Pit Bulls and a Pork shoulder or butt nearby and 100% SICILIANLong Island N.Y.

Just my 2 cents......I always cook fat side down on both Brisket and Butts......the fat from the top will not run through the meat it will just roll down the sides.....much better bark with fat side down........there should be no flare up using the platesetter......cooking meat side down, you lose a lot of good bark sticking to the grid.....before and after pictures below
