Had our first event this weekend , ended up selling 27LBS of pulled chicken , 70 LBS of pulled pork , 5 gallons of Brunswick stew along with grilled wings and chicken tenders . We made loaded tater tots , 6 ounces of tots topped with 4 oz of pulled pork or chicken ranch dressing , cheddar cheese sauce , bbq sauce , sour cream and jalapeños . Went through 32 LBS of tots and 41 LBS of fries plus slaw and beans . Great first event , ended up pocketing about 2k .

That's after food expenses , I didn't count one time expenses like the lemon squeezer , fry warming lamps and food warmers . Lemonade and soft drinks are good money makers , a third of the profit came from drinks . Also sold 5dozen of scratch made cinnamon rolls .

Strong work. Drinks tend to be the biggest moneymaker for any food service endeavor.
Add some sweet tea. Minimal investment and you can add a premium over soft drinks. -
Sweet tea is definitely on the list to add . Lemonade shake ups are a good money maker .

I looked at the trailer pics, that is quite a project! Would be interesting to see the floor plan.I assume you pre-cooked most of your proteins before the event?XLBGE, Small BGE, Homebrew and GuitarsRochester, NY

During the hot months my friend sells snow cones. Makes a killing with the kids. Cold weather... Hot chocolate or spiced tea. Fruit tea is popular with the ladies. None are expensive.Green egg, dead animal and alcohol. The "Boro".. TN

It's a 8x16 box trailer , the floor plan was drawn up on a sheet of paper . I took the measurements of the equipment I wanted to install and drew the plan to scale. I will find the drawing and post it . The pork and chicken was smoked a couple of days before the event . Drinks are great profit , I would like to install fountain drinks if I can make room . My wife and 12 year old son walked through the festival and ended up trading pork dinners for funnel cakes , deep fried Oreos , bird houses and alpaca socks .

I can take some pics of the food trucks outside my office if you'd like. Some have the dispenser outside the truck with the CO2 and syrup up behind the passenger seat. Maybe even do a sodastream and do custom sodas. I wonder if they have a food service one.
