    Welcome back! Missed ya! I've seen those plate setters before. Pretty good idea. I bet it would be perfect for a large cut (like Baltimore Pit Beef) where a reverse sear is normally required. You could just sear it straight on the PS, then add your grate for indirect cooking without having to even mess with taking it in or out.

    Thank goodness, I was beginning to worry if an alligator had gotten a hold of your other hand and didn't let go.  Welcome back man.
    I raise my kids, cook and golf.  When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.
    Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.
