Went looking for a bone in hale yesterday but there was none to be found. Just spiral hams and that was not what I wanted.

So found a nice 2 pack rack of St. Louis ribs. Rubbed them down at 6:30 am this morning. Just put them on the egg at 200 aiming for 250 for 3 hours. Then I will foil them for an hour then back on the egg naked until they pass the bend test.

I personally would rotate them half way through. I did that once and the top ones do cook faster IME.
