Gordon Ramsay Steak at the Paris Hotel. I was there just a few weeks ago. Superb service and great food. Get the Sticky Toffee Pudding for dessert. Beyond awesome.

Breakfast...#1 spot IMHO is the Hash House A Go Go...it is in the Quad Hotel (next to Harrah's) It is upstairs...Huge plates of food & great Bloody Mary's...go early or expect a wait..
Dinner...Del Frisco's...

People eat in Vegas? I can't remember ever having a meal there!

There are two conventions I usually go to every year, and they're always in Vegas......my favs:
Buffet at the Bellagio.......for breakfast, lunch, and dinner! This is the only place I'll go for the buffet.
Capriotti's is a chain around Vegas, but they have great sandwiches. The Capastrami, Gobbler, Hot Italian, Philly, etc are all awesome.
"Hidden Pizza" at the Cosmopolitan was great for a late night snack--but good luck finding it......it's hidden. If you come in the front, go up the escaladers to the top floor and stay left. There's a narrow hallway between the restaurants leading you back to a tiny room with a pizza oven and a few stools to sit on. If you see the pinball machine and the vinyl records on the wall, that's it.....follow your nose.
Batista's Hole in the Wall, is a fun place. Italian food--it's ok at best, but Mr. Batista's charm and accordion, are the highlights of the night. Lot's of old world Las Vegas memorabilia on the walls too.
The one place I would really like to go, but have never made it to, is Michael's Gourmet Room at the Southpoint Casino. It's south of town in lone casino, but I have heard spectacular things about it. It's a very small, old school restaurant very similar to Al's Steakhouse in St. Louis. Harold, the Maitre D, at Al's is the first one that recommended it to me.
Other places to see.......Hoover Dam--take the long tour, it's worth every penny and you go down into the bowels of the dam (remember Vegas Vacation?) The Mob Museum downtown was good; the Atomic Testing Museum was better. I always go to the car museum on the 5th floor of the Imperial (named something else now?) And I always spend a few hours at the Pinball Hall of Fame just east of the Tropicana.
Shows: Anything Cirque du Solei is good. I'd like to see the knock off one at the Aria. Funniest show I have ever seen is Vinnie Favorito at the Flamingo. This guy tells a few jokes then just makes fun of people in the audience for the remaining hour.......sit in the back unless you want to be ripped apart. You can always get half price tickets that morning at dozen Tix2Nite locations on the strip.

I have 2 -9 (N9NE) steak house in the Palms... whilst there ask for the manager and have him get you through the line to 'moon', the club on the roof.Denny's near the Venetian- everyone will end up there anyway, just admit it.+++++++++++++++++++++++++++Austin, Texas. I'm the guy holding a beer.

Can't say anything about the rest of the menu as I've never had anything else, but if you want a good appetizer, try the shrimp tamales at Bobby Flay's place.
Another suggestion, is Firefly. Tapas, but with a bit of a spin of the traditional. It's not too far off the strip, but we always take a cab.

Any of Emeril Lagasse's places are great. If you are into sports and have a team playing this weekend, go to the stadium in the Palazzo. We usually stay here or the Venetian and it is very nice.

There are to many great places to list.The FireFly that is in the Palace on Fremont really stood out to us though. It is a great Tapas place. Get a table that faces the window so that you can see the show light shows from your seat.Large BGE Decatur, AL

Picasso in the Bellagio is really good (and pricey). They actually have something like 17 original Picasso's in the place and it overlooks the water show. If you want some good local Mexican, there's a place on E. Desert Inn Rd called Lindo Michoacán, that was great. Definitely off-strip and very local, but nice

Gallagher's Steakhouse in the New York, NY. Can see the dry aged beef on the corner of the casino. 2nd best steak I've ever eaten.

Well out of all the spots my favorite restaurant ended up being Prime in the Bellagio. The steaks where unreal. It was a business convention so I didn't get to do much adventurous eating ... had to play it conservative. Thanks for all the advice!!!

Since you booked at Del Frisco's then I will assume money is not an object. While I have no problem with Del Frisco's I think there are some better steak houses for about the same pirce....maybe a bit more. Here is the list of steak houses that I would do in Vegas. I have been to carnvino and had the 6 month aged beef...phenomenal and been to Cut and had the Kobe beef (this place gets legit A4 grade Kobe). Both were knock you socks off experiences. Food at Cut cost me more than the wine I purchased....

As for buffets... those are not really my thing. But I understand that there a lot of fans of the Wicked Spoon at Cosmopolitan, Bachanal at Ceasars and The buffet at Wynn or Bellagio....these are pricey buffets...

Oh Yeah, last time I was in Vegas I went to Milos in the Cosmo. Very good time. You get to pick your fish and they will serve it to you tableside....
