We plan on doing six to eight local events a year . All meat except BBQ will be prepared on site using the Big Green Egg . I have been inspected by the health dept and classified as a mobil kitchen , I am able to set up with out being inspected at each event .

Awesome setup there. How do you plan to reheat the pork to serve? Also, when will you be pulling the pork? With only 6 - 8 events per year, have you calculated payback on it and how many you need to serve per event to break even, or is this an extension of your hobby and ROI doesn't matter?They/Them

I am located in South West Virginia , I plan on traveling in a 60 mile radius . I reheat the pork on the stove top . This is an extension of my hobby but by building it myself the cost was low compared to the ready to work trailers less than half the price . I should break even after five events .

Wish you the best. If you were in the middle of Texas you would need 5 tons of a/c.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.
