Cut the belly and little flippers off with cooking scissors. Use a knife to score a deep cut in the belly. Split the back with the scissors. Garlic, pepper, butter pats and lemon or lime on the belly. Light the XL in the back, so you have direct and indirect, and bring to 400, raised. Do shell down for 5 minutes, direct, the belly down for a few minutes indirect.
Whole tails look great, but the best way to eat is to harvest both, cut to chunks and dump in hot, garlic butter. Then share with The Spouse and try not to notice the hot butter running down her chin......
