Did up some whole beef short ribs that I started late this morning so I wouldn't get distracted while I was watching the magician Peyton Manning perform. Based on APL's Serious BBQ beef short ribs that can be found HERE
, except I didn't feel like wrapping when the time came so I just let them roll for about 3 hours 8 hour total cook at 250-300ish. Oak for smoke.

plated with some beets (I like it still on the bone my wife slices hers up more like brisket)
