Breakfast Casserole

I cooked up a breakfast casserole this morning on my BGE. This was my first attempt at something like this and it turned out pretty good. I made it with Jimmy Dean breakfast sausage, eggs, English muffins, 1/2 onion and of course cheese (mozzarella and cheddar). Baked for about an hour at 350.

  • I was searching for breakfast recipes and this looks simple but attractive, tasty I'm sure and I have all of the ingredients. @Cuda1965 can you tell me how much of each ingredient was used and how many breakfasts did it make? Looks like a good thing to bring to the office.

  • @North_Is_Up Sorry it took so long but here you go. This filled a 9x13 pan. Not sure how many people it would feed, but it should feed a few.

    1 Lb of Jimmy Dean breakfast sausage
    6 English muffins (broken up in to ~ 1 inch pieces)
    1/4 cup butter (melted)
    1 cup mozzarella cheese
    1 cup cheddar cheese
    1/2 onion (finely chopped)
    12 eggs
    2 cups milk
    1 tsp of paprika
    a pinch of salt & pepper for taste

    - Cook the sausage
    - in the 9x13 pan, layer half the muffins, then half the sausage and repeat
    - add the onions on top, then drizzle with the butter
    - add the cheese on top
    - Mix the eggs, milk, salt, & pepper in a bow and then poor on top 

    I let it sit over night in the fridge then cooked it in the morning.

  • You could use any type of meat I guess. My wife makes a similar breakfast except she cooks it in the oven and uses bread (and I think a few other ingredients). She'll change it up by using diced ham or bacon.
