Wrapping butt question

I have decided to give the ol' Texas Crutch for the first time on my butt and ribs for the first time today. For those of you that regularly use this technique, do you FTC the butt with all the rendered fat, or do you pour it off before FTC?

    I just leave the foil around the butt. Maybe add another layer or two then wrap in towels. Then when I pull the pork, I dump all those juices in with the meat.

  • foil it whole, let the fat juices reabsorb...wrap tightly + towel + cooler and relax...

  • Thanks for the info guys. As a note, I will never wrap ribs again. Did something like a 2 - 1.5 - 1 process. We all agreed that we prefer our ribs a little more firm.
