Salmon on the Bucket

Pork shoulder last night cooked on the Egg, salmon tonight cook on my soul bucket with Alder and Mesquite

    I have had this around 25 years. There was a guy in Oakland Ca that made these cookers for years. Very high quality for this type cooker. I have 2 grates, one 1/2 grate and one that is about 6" shorter than full length. The Salmon was cooked on the 1/2 grate. Cook a few minutes direct then slide the grate to other side to finish
