We hope everyone enjoyed their Fourth of July weekend and is excited for more warm weather grilling! This week, we’ll be making these two burgers: Stuffed Portobello Mushroom and Caribbean Chicken, and also eating lots of these Ice Cream Sandwiches in honor of National Ice Cream Month! Loaded Baked Potato, Pigs in a Blanket and Smoked ABT's

The loaded baked potatoes and the pigs in a blanket were pretty straight forward....cooked those inside.  But the ABT's were smoked up on the Large BGE with some Cherry Wood for smoke.  For the ABT's, the Jalapenos were halved, stuffed with Whipped Cream Cheese and a Lil' Beef Smoky, then wrapped in 1/3 slice of Bacon and dusted with some Rub.  Smoked up around 350 deg f dome temp until the Bacon got crispy.  I used the leftover Lil' Beef Smokies for the pigs in a blanket.  :)

This was all done last night for the Gamecocks game.  My Gamecocks need some work this year if they expect to do well.  The defense is really struggling.  However, win or lose, I still plan on using the game as an excuse to grill up some Gameday grub each week.  ;)
