Queso con chorizo

Tried to make queso con chorizo (mexican cheese/sausage)
Grilled 3 chorizo sausages, and a poblano pepper. Direct at 400.
Minced 1/3 cup of onion
Minced 1 garlic
3/4 can of diced tomatoes (petite diced would have been better)
When sausages and poblano were done I minced the poblano and chopped up the chorizo.
Added the indirect stone. 350 indirect
Added a cast iron pan.
Placed some olive oil and garlic/onions/peppers and cooked until the onions started to get soft. The. Added the chorizo for about 5 minutes. Added a cup of sheedded monterey Jack cheese and a cup of shredded mexican blend cheese. (Will use just lorry jack next time.
When all the cheese melted we stuffed the queso con chorizo into low carb tortilla wraps.
Very tasty.

Looks egglicious. I like to cook the chorizo separately and drain the grease, also have found the Queso de Oaxaco. I find mine in local latin grocery stores. Makes a killer melted cheese dip.spread.
