Saturday Cook... Decided to start a new thread

Decided to start a new thread after coming home from Wegmans with some more ribs and treats...
Going to start with 3 racks of ribs, 1 BB and the others spare. Then I'm going to attempt those crazy Hatch chili dogs, and finally some steamers.
That should keep me busy for a few hours LOL

Sounds like a great day Hap, going to be 100 degrees here on the plains today so I think I'm going to wait until a little closer to sundown before firing things up. Probably just something quick to minimize the amount of football missed.

@Hap-congrats on surviving the work week and the great cooks to date. Have you thought about trimming the spares St Louis cut. For me, a more uniform cook and the flap meat finishes sooner and is great for cook's treats, beans and chili. Just an opinion and we all know what those are worth-BTW-caught the Woodford pic on your other thread. Their Double-Oaked is a whole new ball-game. Looks like others have roasted slightly before stuffing, I would imagine you could do it either way. It probably helps stuffing them by making them a little less rigid.

Can you provide more details on how you do the clams? My father and I love them, but I've never cooked them on the Egg.
Rinse and scrub them, and then soak for a few hours in clean water to let them de-sand, use a strainer so the sand falls out and they don't ingest it again. Change the water a few times. Just keep them in the water and fridge till you are ready to cook.
Get the egg up to about 400 or so and then just lay them on the grate and close the lid. Check in about 3 to 4 min and start removing the ones that have opened, you can put them in a bowl or on a platter, or go super casual and use a foil pan. Once you have them all opened, you can drizzle them with butter, lemon juice, whatever you want. I ate these as is, they were that good.
Make sure and throw out any that don't open, don't force them open, just toss them out. Eating one may put you at risk for some nasty food poisoning.
This was the first time I've done them on the egg, it will not be the last
