Help please w brisket!

I am doing a 7 lb brisket the Travis method. I have had it on for 5 1/2 hours and its already to 201 degrees. What am I doing wrong?. I put the pan on top of the grate that is sitting on my place setter. I put the legs down and put the grate right on top of the place setter.
Any advice?

I am cooking at a dome of 300. It seems to be cooking way too fast. I thought it was about 1 1/2 hours per lb

Hi! I usually cook brisket shooting for about 200-250, so you were higher, but no worries. I'd go by the temp and take it off the grill and wrap it in foil to rest. Put it in an old cooler or wrapped with old towels to keep the heat in.
I don't know the Travis method, but next time I'd start at a lower dome temp, then it should be about an hr to 1.5 hrs per pound. I'm a Mike Mills Peace Love and Barbeque guy from way back.

It's done. When you cook at 300 in liquid, it cooks crazy fast. Pull it and FTC if you need to hold it.Keepin' It Weird in The ATX FBTX
