3 butts on over night. Woke up surprised

I put 25 lbs of pork butt on last might after havering the egg stabilized around 250-275 for an hour. We'll I woke up this morning and went to check it and saw 200 on the dome thermo and 213 on my grid thermo. I had a mini heart attack thinking I lost my fire so I opened her up a little and watched as the temps started to rise back up! Amazing it would hold that low over night. I'm cooking for my moms 50th birthday part Saturday, 2 briskest go on before bed tonight. First double header over nighter for me. Wish me luck!

  • Alls well that ends well.  Good luck with the brisket.

  • Yeah tell me about it. They would have taken forever to cook! I believe the fire was holding steady at 290-215 for quite a while

  • I had a similar dip in temp during my last overnight cook. The egg was settled and the grid temp was steady for a couple hours at ~220. I went to bed and woke up about 5 hours later to find the grid and dome temp had dropped to 160. Luckily I was able to open the vents up and get the temps back up.
