Wood for Salmon

I caught 5 beauties yesterday in Puget Sound (3 coho and 2 pinks). Im brining a few filets right now for smoking on Saturday. I see some folks use alder but was curious what others use for salmon. I have pecan - how would that do?

    Cedar is pretty classic with salmon too. I've used maple too. Pecan would probably be pretty good, that is usually my go to wood for just about everything.

    Cedar is my go to alder is good,maple is solid. Depending on seasoning you can go light with a fruitwood (a small chunk or few chips). I have had success with peach and apple.

    Grambler - where are you located, so jealous you have the ability to pull them from the water and put them on the egg.

    Ditto on Aquacop's query.  Just left from out there. Lived in Lake Stevens and worked at Everett Naval Station.  You frequent Blood Decks at all?

  • I usually do alder and maple, for cold smoking and cedar alder and maple for hot smoke. Sometimes a nice peach or cherry. For something different.

  • Here in the Pacific Northwest alder is plentiful and great for salmon, it's also hard to beat this area for fishing unless you live in Alaska. Right now humpies (pinks) are in full swing , silver (coho) are starting to show up and we just got done with Kings (chinook). Not to many places in the states can compare. The pic is from the Columbia river about 14 days ago, fishing at the Astoria bridge.

    I actually caught a 25lb king as well but they put a stop on kings last week, unfortunately. Fun times bringing those kings in! How big is that one? Looks huge!

  • Here's how the two filets turned out. I already ate one hunk and it was fantastic. Ended up using peach and pecan hunks.
