We hope you all got to celebrate those tasty food holidays last week, we sure enjoyed them! We are even more excited about the beginning of fall, for so many reasons, but mainly for experiencing the cool, crisp air while being outside cooking up the best recipes the season has to offer. spare ribs with photos

today I cooked 2 racks of spare ribs I did the 3,2,1 method I have to say they came out fantastic,I cooked them at 225 for 3hours then wrapped  with tin foil then cooked for 2 hours at 235 then unwraped and cooked the last hour with BBQ sauce and at 275 In took photos all thru the cook but was to excited to eat that I didn't take pics of the plating im sure you can understand 
2 Large Eggs and a Mini 2 Pit Bulls and a Pork shoulder or butt nearby and 100% SICILIAN
