Restaurant pulled pork question

Not sure if this has been discussed before. When bbq restaurants serve pulled pork are they using the whole hog or the butts and or picnic hams?

Depends on the restaurant and region of the country. I bet it's between whole hog and butts.

Do you think you can tell taste difference between the different parts of the hog?

Typically with whole hog you get the skin along with the meat which is crunchy bits along with the meat. The rubs are typically much more simple(salt, pepper, mop sauce). Also you can get different textures of meat from the various parts instead of just shoulder.

you want in on a little secret? Most of them reheat their pulled pork using Coke-a-Cola! You won't see bottles of it around, but those dark jugs of "moisture" are pure Coke.

I reheated some this weekend with Dr. Pepper, based on some suggestions from this forum. It came out very tasty without the cola flavor provided great moisture

I have 2 friends that own BBQ joints. One uses butts, and the other uses whole shoulders.

So they both use shoulders, but one also uses the shoulder with the picnic?

Thanks for the info. I may be providing some meat for a buddy to sell. I think I'll stick with what I know and do picnic hams.
