Weird brisket coloration

After I began slicing up a brisket; I found a weird coloration between the fat and lean parts of the brisket. Is this normal? I do not recall ever seeing this before.

  • The Franklin BBQ YouTube video looked to have something really similar, but I've never seen it myself. That brisket looks awesome, by the way.

  • To hell with the color, that looks fantastic!
